How Much is the eBook?

Blueberry Muffin Recipe:

1 c. sugar

1/2 c. canola oil

2 eggs

1 c. ricotta cheese

2 tsp. vanilla extract

2 c. flour

1/2 tsp. baking soda

1/2 tsp. baking powder

1/2 tsp. salt

1 c. fresh blueberries

1 tbsp. sugar

Combine sugar and oil until all sugar is ‘moistened’. Add egg, ricotta and vanilla. Mix well. In a seperate bowl sift flour, baking soda, baking powder and salt together. Combine wet and dry mixtures just enough to incorporate. Sprinkle tops of each muffin with remaining 1 tbsp sugar evenly distributed through all muffins.

Bake at 350 degrees for 22 minutes for regular size muffins.
